That’s exactly how this chicken traybake came into existence! Being a food blogger, exploring recipes is part of my job and that’s when one pot baked meals caught my attention.
When I carved out my chicken traybake recipe, my primary motto was to make something colorful which will trigger our appetite as soon as I serve it on the dinner table!
What is Chicken Traybake?
My chicken traybake with peppers and onions is a one pot chicken dinner which anyone can make in a jiffy!
This is a simple recipe especially for those who want to ditch the takeaway and start cooking healthy meals at home which are not only quick but also super-simple to make!
This chicken traybake is a one pan baked chicken and veggies with very simple spices & seasonings. So, there is zero chance of messing this up!
Red and yellow bell peppers always seem very attractive to me and they create a stunning color palate. Hence my easy choice of veggies for my chicken traybake was these assorted colors of bell peppers!
If you make such gorgeous & healthy dishes at home, chances are you will stick to homemade food more often than you would have imagined!
You don’t need any special cooking skill to churn out the most perfect chicken traybake; just chop up chicken, peppers & onions as you like them and dump them on a baking sheet.
Mix in the seasonings & spices and place them in a preheated oven for 30 to 35 minutes! While you wash up before dinner, your healthy and tasty chicken dinner will be ready for you to devour!
Ingredients for Chicken Traybake
Chicken: Protein being the key component for a healthy and balanced meal, this chicken traybake is just perfect for having a high-protein dinner!
You can use chicken breast or chicken thighs which I had used as I like the chewy and tender texture of chicken thighs compared to chicken breasts.
Ensure to use skinless and boneless chicken, be it chicken breasts or thighs.
Bell pepper/Capsicum: Roasted peppers are simply awesome even on their own and when it is paired with roasted chicken, it just reaches another level of deliciousness!
Use an assorted color of peppers for that stunning visual appeal; it will make everyone hungry and crave for more!
Onion: Roasted onion adds a subtle sweetness to your chicken traybake and makes your dish more tempting!
The charred edges of onion petals add the much needed smokiness to your roasted chicken and peppers!
Extra virgin olive oil: A drizzle of extra virgin olive oil will help crisp up your chicken and veggies while they bake. But don’t go overboard with oil!
No matter which oil you are using, oil intake must always be limited and that’s the number 1 rule I follow in my healthy eating journey!
Garlic & Onion powder: As this is a traybake chicken, I used the aromatics in their powdered forms. Use a good amount of garlic and onion powder to enhance the overall flavors of your chicken traybake!
Italian seasoning: To keep the weeknight meal simple, I used my holy grail spice mix which is none other than Italian seasoning!
I simply love this all-rounder seasoning! It has all my favorite flavors of herbs and works like magic with chicken and veggies!
Red chilli powder / paprika: To add a kick of spiciness to satiate our Indian taste buds, I sprinkled some red chilli powder which you can replace with paprika!
Combination of Italian seasoning with chilli powder is simply mind-blowing! Try this and I am sure you won’t regret it!
Salt & pepper: Season your chicken traybake with salt and freshly crushed black pepper to taste.
How to make Chicken Traybake?
Step 1: Cut each chicken thigh into bite-sized pieces (of about 1-inch length). Wash and let all water drain out. Pat them dry and set aside.
Step 2: Cut each bell pepper / capsicum into 1-inch chunks. Wash and drain out all the water. Set them aside.
Step 3: Peel and wash the onion. First cut it into 4 big pieces. Then open up each layer. Set aside.
Step 4: Take a large mixing bowl, big enough to hold all the chicken, peppers and onion.
Step 5: Transfer all chicken, peppers and onions to the mixing bowl.
Step 6: Now add the extra-virgin olive oil, garlic & onion powder, red chilli powder, Italian seasoning, salt & pepper to the bowl.
Step 7: Using a spatula, give everything a good mix so that each piece of chicken and veggies are coated with oil, spices and seasoning.
Step 8: Preheat your oven to 200 C / 400 F and place the wire rack at the center of the oven.
Step 9: While your oven is preheating, take a baking sheet and line it with aluminum foil.
Step 10: Now dump all the combined chicken, peppers and onion over the baking sheet. Spread them out in a single layer evenly.
Step 11: Bake the chicken, peppers and onion in the preheated oven for 20 minutes first.
Step 12: Then take the baking sheet out, give them a mix using a spatula and again spread them out evenly.
Step 13: Return the baking tray back to the oven and bake for another 15 to 20 minutes until the chicken is cooked through and peppers & onions are soft and charred on the edges.
Pro tip: Check the doneness of the chicken by cutting one piece using a fork; if there are no traces of pink and chicken is completely opaque, it is completely cooked through.
Step 14: Your healthy weeknight dinner of chicken traybake with peppers is ready! Serve it with a warm bowl of quinoa or a side of salad!
